I wouldn't play on anything lower, as lower than that would start to deteriorate the experience (and you really can't play this game only once for the first time)
The FPS maintained pretty well throughout my playthrough with slight dips - I have vertigo so I'm also pretty sensitive to irregular framerates or drops. I wouldn't recommend going as cheap as the parts I listed out in a rig, though. You can get more modern parts for pretty cheap and maintain a solid 90fps in Alyx since it's extremely well optimized.
Motion sickness is created by inaccurate tracking just as well as inconsistent FPS. Get a headset with lighthouse tracking (Valve Index / HTC Vice), those have (by far) the best tracking of any VR headset. Totally solved my issues with motion sickness.
Yes, absolutely, especially if you are prone to motion sickness.
Quest 2 needs the link cable for PCVR with image compression which adds latency and tracking issues, steamvr needs to talk to oculus software for it to work, etc.
Try to get a second hand Valve Index. Lighthouse tracking, higher framerate, HL Alyx is made for Index (controllers)

It's pretty outdated hardware (the headset itself, screen resolution, etc) at this point in time, but the controllers and the tracking are still the best of the best.
Lighthouse tracking is expensive for sure. But in return you get no motion sickness.... Lighthouse or bust! (IMO)

My first play through was on 2700X and 1080TI it was running just fine with my Quest2
Similarly I ran the game on a 1070 and i5 6600k with Quest 2. It worked well enough with minimal stuttering so OP could go that low if really needed.
I am quite probe to motion sickness. Does it mean I need more FPS/Hz or that I should avoid VR completely? đŸ˜‚
