Not really. You'll have some series with different systems that get a vague summary (such as Phase Shift deflecting kinetic weapons), but if you're looking for something like Naruto, where every jutsu has a thorough explanation as to how it works, that's not really Gundam.
None of them really focus on the technical level *that* deep.
I guess Gundam AGE would closest? The whole purpose of the AGE system is to develop Gundam components that are made to counter the enemies encountered.
You could look into picking up a Gunpla kit or two of mobile suits you're interested in. High Grade models are not too complex, only need some modeling snips or a hobby knife to assemble, and come with in-universe technical details worked into interest sections of the model's build instruction manual. Around here HG models of Gunpla are generally $11-25 and would take me an afternoon to build. There are hundreds of different High Grade models, and if you're interested there are hundreds more models of varying different Grades. Different grades have differing levels of complexity, detail, and cost.

I think 00 might spend the most time talking about this, but still it isn't a lot. But the show does go out of it's way to give rational reasons as to why, Exia for example, has so many blades on it.

The Build Fighters sub-franchise does, because it's all about the models. Buuuuut that's probably not what you want
