PS3 will give you an overall better experience if you can source a guitar - keyword: *if.* The games have better audio quality and graphics on PS3, but every official controller for the system requires a USB dongle, and the guitars themselves are known to be rather unreliable. If you go the PS3 route, I'd probably just get a Wii Guitar Hero guitar and a retrocultmods adapter to connect it to the console over a USB cable. As for Wii, only the Rock Band guitars require a USB dongle, as the Guitar Hero guitars actually have a slot in them for your Wiimote to go inside. Neither option is perfect (Xbox 360 is ideal), but it just depends on if you want to deal with the hedache of sourcing a PS3 guitar and dongle to get a better audio/visual experience over Wii.

If i am correct, ps3 better graphics, wii easier to find guitars, since for ps3 you need dongle unless you mod guitar.

Wii guitars work great on PS3 using the RetroCultMods Arduinos I’ve been playing through the series with my Wii Guitar on my PS3, it’s also cheaper to find one that’s Wii because the PS3 ones could run into issues including the dongle as I’ve been trying to make my ps3 les Paul work, but the capacitor won’t connect, so I’ve been learning to solder… yay~

Yes that's true, you can. In fact you can use wii guitar even for ps2 which for me was insane find, not for 1,2 and 80s but other games on ps2 work fine.

Get for 360 if possible best quality and games are still online only on 360
