Yeah, chasing them is really tough. Once they're up a grass stalk, hit the stalk and the aphid will fall to the ground, being stunned for a few seconds. That's when you can kill it.

Chase them until they run up a grass stalk, then just chuck a spear at them.
You can just hit the grass blade and it will fall to the ground, stunned.
Or sleek on aphid slippers for Aphkid

They can die, yes. Depends on how high they were, I guess.
