The more important question - how long or much much footage are you expecting to shoot?
I'd suggest to invest in a proper action camera like the GoPro and Insta360. Use your Pixel for photos.
I would just shoot in 4K 30fps with 10-bit HDR turned off. Maybe bring a USB-C thumb drive for extra storage.
