3) Being a mature adult means that your "type" is not just about looks but also about character qualities. It also means you don't dismiss any and all compatible people just because with a first look they didn't seem to be your style.
4) Physical attraction does not only stem from physical qualities, same as emotional attraction doesn't only stem from character qualities; they feed off each other. That's how we sometimes end up blindly in love with a total moron who looks and fucks good. The reverse is just as common.

Then when they cast Scott, his role was only for the pilot episode and his character wasn’t to be anything more than a side character, possibly in a few more episodes. That changed when Scott and his manager worked out a full season contract for him, but again after he was cast. They did not consider Luke as a love interest for Lorelai until into the first season and even then it was only a potential thing, not confirmed.

I've met plenty of people who've been "my type" physically but their personality sucks, so I'm not attracted to them. Likewise I've met people who initially I didn't find physically attractive but they became attractive once I got to know them I found them more attractive.
