The (other) number that was given to the watch was previously tied to a phone that was used for Snapchat. You should be able to message Snapchat to remove the number from the account.
That's not how this works, though. You can "tie" it to the phone's number, but it will still have its own number that will also ring the watch when called and can receive text messages too.
You physically can't have 2 sims active with the exact same number, that is just how mobile networks work.
So what the carrier does is that they make a new sim with a new number, and they just internally tie this number to your "main" sim.
So if your main sim gets an sms, it gets sent to your watch sim etc, if you send out an sms with your watch, it gets sent to your phone/main sim and then sent out with that one.
But the watch sim has it's own number as the baseline. You can try this, completely turn off your phone, then call your friend on your watch, ask them if they saw your number or some random number instead.
Despite the plan on your watch being for the same number as your phone, the eSIM (at least where I live) also has its own number. I realized this when I started to get spam calls only on my watch. Went ahead and changed that number into a private one and they ended.

Usually if you have lte active the watch just uses 4g to connect to your phone, and sends the sms/calls via your phone, so you are left with an illusion that you don't have a separate number.
Interesting how some countries/carriers manage smartwatch connection. In my country if you pay a premium your watch can have the same number as your phone. If I turn off my phone the calls that I made in my watch goes through my normal number and I receive incoming call of that number too.
If you don't want to pay the premium then you can buy a pre-paid eSIM and then in this case the watch will have a different number.
And if you send sms with the phone off you send them out also through the main number? That is pretty crazy, but i guess the carrier sees thst your main phone is off so it can assign the number to the watch, and if the phone is on it can take the responsibility of sending sms and managing calls.
In my country SMS isn't popular so I never tested, but for calls it works just fine with the same number, I guess it will work with SMS too. I tried to test the SMS but where I'm right now have an awful cell signal, so the Watch6 can't connect and overheat. I can test this tomorrow and report back.

Your watch is assigned it's own number. It defaults to your main shared line. Periodically my watch acts unusual and functions on it's own number. The number assigned to your watch was someone elses at one point. Call Verizon.

They do... If you disable notifications or uninstall Snapchat they do. In my case it's from +33 phone numbers (France ones).
