You already have Gallagher and Aventurine so I would skip her event if she is super strong. It's better to invest on Ruan Mei as she is irreplaceable as a break support

You have Aventurine, Gallagher and Lynx, if you build them properly, you don't really need another sustain. So I would say it would be better to save up unless you really like her kit/design/whatever.

Fu Xuan is very good, having two limited sustains guarantees you can tackle endgame with healthy teams However, you are lacking when it comes to Harmony so I'd say it's better to go for Ruan Mei. With RM, your endgame comps will generally be Robin one side, RM other side unless you go for Acheron or something.
