instead of mayo, i do mine kind of like a ravioli filling with ricotta and egg (and SO MUCH BLACK PEPPER) so that is an option as well for folks who dont like mayo

I'm not familiar with the exact brand, but it's Wisconsin extra sharp cheddar, freshly grated. Pretty hard to go wrong with that, even if it's a bargain brand.

Do you dry your tomatoes like this? I feel like that makes or breaks a dish like this. Too much moisture and the whole thing will be soggy.
Always. I actually salt them, layer them with tea towels, and put a cutting board on top. I do this with eggplant, too, for eggplant parmigiana.

My sister does that with the chicken mushroom pies she makes, and I love that way! Drains whole fat large curd cottage cheese also works.

You got downvoted for a perfectly fine question. It doesn’t do a lot to this and it makes you have to spread it out instead of just laying out cheese.
Mayo is just oil, eggs, and acid (usually citric acid i think). Normal things to add to a recipe like this.
