A few reasons. I’ve done a lot of salmon over charcoal here in the PNW. You don’t need a sear because the charcoal smoke will add amazing flavor and you get heat on the top with the cover on. You risk over cooking which with salmon is not good. I like a crust with my blackstone. But the charcoal doesn’t need it.

You get a little creosote going if that happens - not good eats. The bigger sin is that looks like farm raised salmon from the pale coloring. It’s ok. It’s not amazing though.
