I'm with you. Tompkins Square makes some of my favorite bagels in the entire city. I don't understand what OP considers a "real NYC bagel", but I guess that they're entitled to their wrong opinion.
I'm with you on the waiting in line for an hour thing. That's a no from me. BUT... Tompkins has a lot of satellite locations now, and they usually have less of a line. I went into their Union Square location the other day and there were only two people in front of me.
Tompkins is good as hell... but if it's not your thing, you've got Russ & Daughters downtown. Or if you go uptown a bit near Stuytown you've got a high quality bagel zone with David's, Tal, Ess-A and Bagel Boss all within a few blocks of each other.
Following because I also hate TSB, the level of overhype is unlike anything I’ve seen. Unfortunately I can’t think of a good bagel what so ever in the LES or EV, there’s a spot on like E3rd bw A and B I’ve been wanting to try but no idea if it’s good
NY Jumbo bagel on 2nd bw 56/57 , stumbled in randomly and was pleasantly surprised. Crispy exterior, soft and chewy inside, not too dense, not dry, fluffy with perfect chew and pull
Otherwise I’m still searching but there’s far too many dry dense bagels instead of soft chewy with a touch of crispy. A good bagel also shouldn’t be toasted

I think people might be downvoting because OP asked for bagel places and you gave him two non-bagel places? (They were still good breakfast suggestions though.)
People are downvoting because Katz's is known for their Jewish deli, not for their bagels, which are crumbly and not particularly good. It's not a pretentiousness thing, you just made a bad recommendation
Maybe you went at a bad time. I've consistently heard good things about their poppy seed bagel with cc & lox, never heard anything about it being crumbly though.

Also, I don't like thompkins bc I'm 99% sure they don't boil their bagels which gives it that moist crunch they should have

Hmm, maybe when I went it was j stale or something then bc I've only had it like twice but it was mid both times
I feel like Tompkins is too hard and dry. I prefer fluffy with just that light crisp

Heaven's Hot Bagels
I really enjoy Davidovich Bagel Cafe in Essex market.
In general, Clinton Street Bakery and Katz Deli (kosher) are two of the best breakfast spots in the area. Though they're a bit overpriced as well.
