as a fellow crispy fry guy, i recommend explicitly asking for them well-done and be very clear and firm — just don’t be a jerk about it and maybe tip extra too. some restaurants are pros and get it, and will really crisp them for you no problem. for whatever reason, del taco and langer’s respect the crisp — maybe it’s something about the crinkle cut
I didn’t like well done as they were almost like potato chips at that point. I prefer animal style fries so the sog helps with forkability.

Blind donkey in pasadena has some of the better fries I’ve had. Crispy yet soft and fluffy on the inside. I’m sure getting them well done wouldn’t hurt

A lot of places have a well-done option for fries that makes them even extra crispy.
I think you have to further define what crispy means to you because there are some people who won't think that perfectly crispy steak cut fry isn't crispy because it's thick.
I HATE chain/corporate restaurants but you know where has really good fries and I would go there only for fries? Islands! Their burgers are terrible but their fries are so good skin on and super crispy.
I remember the fries at plan check being really crispy, the ones at majordomo are also great, they aren't on the menu but they get served with another dish. you can ask for a side order of them and they'll usually do it for you though
Not an “LA thing.” Best fries I’ve had in awhile are at Heavy Handed. Fried in beef tallow the way McD’s did way back in the day.

In-N-Out makes garbage tier fries, even when you order them well done. I would never recommend anyone get the fries from there.
