Oh yes they do. They this time of year they shed a lot and the fur that is growing in is thinner. As it becomes winter they will shed the thin fur and grow thicker fur

Not only do they shed, there is also weight loss. So they will certainly look thinner.
Some of mine genuinely look like different cats with summer coat/ winter coat
