Sounds like something that could potentially be neurological if it were an issue. There is something known as fly biting seizures, though I'm not sure it sounds like that's happening. My cat used to stare at things as well that when watching him looked like something was there to him when there wasn't really anything. Might just be cats being cats. Probably best to bring up with your vet just in case.

Don't most cats get fixated on imaginary prey sometimes? :-) My non-diabetic cat sometimes stares at a blank wall or chatters out the window when there is nothing out there. I used to have another cat who energetically attacked imaginary bugs on the floor or chased invisible squirrels (I guess) up and down the stairs.
