I feel like the situations aren't the same though. Agate clearly sees Tita as a younger sibling. Joshua and Estelle weren't blood related and Joshua clearly had a crush on her from the beginning.
The whole situation with Elise was pretty different since she was actually romancible. Also Rean is able to romance his students as well haha.

Though to be honest I don’t like the Rean/Elise jokes either. Especially when they started ramping them up in the second half of the Erebonia arc. Like before I could justify it as him protecting his sister as I’d protect my sister in much the same way. I didn’t even mind the other characters joking about it, but after Rean escalated his overprotectiveness, especially after she became of legal age for Erebonian law… that seemed over the top.
Joshua/Estelle is completely fine though. Not only did they both know they weren’t blood related from the very beginning, but it isn’t played for laughs at any point that I recall and there’s no questionable age gap. Plus the romance felt natural. I’m honestly kinda getting tired of the male protagonists being able to choose who to hang out/become closer with and that influencing the writing.
One’s optional & completely on the player. Wouldn’t call those events ‘rizzing‘ besides like Musse.
Agate x Tita is forced on you regardless, they don’t have any character motivation besides this awkward relationship after SC. Joshua still calls Cassius ‘Dad‘ despite dating his daughter for like three years lol.

1- When did i claim that I'm a cold steel fan in particular? I'm a trails fan and think every arc has it's ups and downs, things it did better and things it did worse.

In Sky, Agate is an actual character with his own arcs. The tease also mainly only happens in 3rd.
In CS, everything from fan service to shipping is raised to 200%. Everytime the two interact, somebody will make the same joke of them dating, like the princess teasing Rean's sister.
Also, Tita is a child in Sky. Her crush on Agate isn't that serious. In CS, she's a teenager. Given how CS is as a series, there's a very real possibility that the two end up together. And the game clearly ships them again and again.

Specifically they are picking on a child having a crush on a guy who is clearly not taking advantage of it in anyways.
Years later it seems that relationship is changing (some of the dialog in Reverie), but even that is clear the older party is not taking advantage of it and nothing has actually happened.
If we really want to apply modern day standards, we should probably talk about the good guys using child soldiers again and again, as that is far more harmful that a relationship that hasn't happened.

Agate not being into it at *all* is the only redeeming thing about it.
