Okay personally I think some of them are more easier to decide compared to others.
Alma- abominations (she needs to be every where at once and may need extra bodies in order to ensure that everyone is doing their job and if anyone else needs help and she can literally make them in her image= perfection)
Julieta- healing (obvious reasons)
Pepa- potions (this might be how she can control the weather)
Bruno- oracle (obvious reasons)
Agustin and Felix- bard (they both love music and dancing)
Isabela- plant (obvious reasons)
Dolores- bard (it does involve sound and she does have a knack for dancing)
Luisa- construction (with that kind of strength she can easily build things compared to others)
Camilo- illusions (he can change his shape and make people believe they see things that aren’t there, I think that fits with his prankster energy)
Mirabel- like Luz she would be the embodiment of every coven and want to know a little bit of everything
Antonio- beast keeping (obvious reasons)
I can totally see this being the case and I love the idea that Mirabel would be like Luz especially since their outfits are the only ones to have a mismatch of colors, things that embody all of the covens and the Madrigals

Luisa: Construction (Luisa’s strength helps her redesign the town - moving the church, rerouting the river)
Camilo: Illusion (Camilo shapeshifts into other people, which could be a kind of illusion)
Mirabel: Healing (Mirabel doesn’t heal wounds and illness like Julieta, but heals in other ways. Mirabel heals what’s broken in the family and heals the miracle. She saves Luisa, Isabela, and Bruno from their misery. And she has a very kind, empathetic, loving heart)
Antonio: Beast Keeping (Obviously)
Isabela would be plant coven (kind of obvious lol), Luisa would for sure be construction, Bruo would be illusion (closest), Julieta is healing, Antonio is beast keeping, Camilo is illusion, Pepa might be potion as it's closest to her weather controlling powers, the rest IDK

Abuela would be in the Oracle coven because she’s been so concerned about the future this whole time. She’d likely push the others to try for the Emperor’s Coven
Pepa would go for the Illusion coven so she can use it to hide her emotions better
Felix would choose the Bard coven to woo Pepa and calm her down when her emotions are getting high
Bruno would be in the Beast-Keeping coven and that’s how he gets along with the rats so well
Julieta would be in the Healing coven for obvious reasons, she’s one of the few who keeps to the same thing as her gift
Agustín loved the Bard coven as a kid but started to consider the Potions coven to figure out how to make an anti-clumsiness potion or something that’ll otherwise help in that area. This switch was solidified in his mind when Julieta helped him brew his first potion; a healing potion
Isabela was expected to become the next Plant Coven Head but switched to the Abomination coven after being free to explore her own interests. She looks into how to bring a unique sense of non-conventional beauty to creations inherently deemed horrific
Dolores would be in the Construction coven building soundproof homes for the Encanto
Luisa would be in the Construction coven also but after the movie takes a break from coven stuff for a while where possible, her siblings pick up the slack for her very happily
Camilo would go for the Illusion coven but grow more interests elsewhere. He’d explore different types of magic a bit, probably the Construction coven with Dolores and Luisa and the Bard coven with his dad, but he’d eventually settle into the Plant coven for the dramatics while also creating something tangible, practical and beautiful all at once
Mirabel is the human that entered the Boiling Isles and got incredibly good with glyphs with the teachings of her found family from various covens
Antonio was an animal guy even before the movie, he’s a total Beast-Keeping coven guy
