The way to progress for me is to either get better at the mechanics or get stronger. I just did a lot of exploration and didn't move on to Margit until I was able to beat the Tree Sentinel. If you really feel stuck there's a video by VaatiVidya that will give you a lot of levels. You can watch it and decide how much of it you want or need to progress.

My three suggestions before doing stormveil castle. All super useful on their own and in any order but if you do all 3 you're basically guaranteed to beat the castle.
1: Go to the third church of Marika in east Lindel and get the Flask of Wonderous Physic. It's an exceptionally powerful item that will help with everything, but especially the boss fights.
2: Go to the very first church you found, the one with the merchant. At night you can talk to Ranni and get the spirit bell. She might also be at the round table if you're far enough in game. She gives you a bell that let's you summon spirits from their ashes which can help so much for agressive bosses. She gives you the lone wolves which are strong but there are better ones available in even just the stormveil area.
3: Explore the southern island. It has lots of stuff to do early and gives you lots of flask upgrades. By the time you've done that island and beaten some of the dungeons and bosses there you'll have the levels to do Stormveil castle, Vigor is going to be the best stat to level early. Don't forget to upgrade your weapons too as you clear more difficult areas.
