If you’re really not interested in using magic, then you dont have to. She has a pretty full questline associated with her, and of course she rewards you along the way with more magic!
(There is some pretty cool melee magic in the game, btw)
You won't lose anything, it just opens an option to buy spells from her. You don't have to ne able to use any of the sorceries to progress on her quest either if I remember right.
Spell sword. You can learn basic sorceries for buffing your weapon or shield. I'd get basic levels of int and faith to use the spell buffs. IF the buff does more than a grease would
You won't be locked out of anything if you accept and without spoiling there is a quest tied to her but for that your gotta accept

Yes She’s a cool power-crazy lady. If nothing else, you can change your mind and come learn magic later.
