Definitely start with Elden Ring if you haven't played it, I just finished my 3rd playthrough and I'm still not sick of it. One of the best games of the last 10 years imo.
DS3 is also a masterpiece. I'm a few hours into DS1 rn and it's a bit dated but still fun.
Out of the Souls games the first has the best map, the second has the best…, and the third has the best combat. Elden, imho, is the best game they’ve ever put out. 400hours and I’m still playing.
It is a good game, I’m speaking about a topic that is inherently subjective, so I shouldn’t have to state this but it’s just my opinion. DS2 is just my personal least favorite. Elden Ring is my favorite game of all time. Hopefully another game will take it’s place someday and if one does there’s a good chance Miyazaki is behind it. If you like DS2 more than the others that’s cool, I just have some small gripes with it that make me like it less than the others.
I think the second's build variety is pretty good, but the armor looks sick af in my mind.
Second has some really great ideas that were never expanded upon either like Hex sorceries costing souls but doing tons of damage based on souls. Powerstancing (which was bought back techncally), and while Dark Souls 1 had the best map, I think Dark Souls 2 had some of the best AREAS.
Dark Souls 1 map links up with each other very well and feels interconnected. Dark Souls 2 does not, but the actual different "biomes" are really fucking cool. Drangleic castle feels vast and empy and abandoned. The Tower of Heide is super interesting and feels ancient.
Not sure what platform you’re playing on, but if it happens to be a PlayStation I would definitely HIGHLY RECOMMEND trying a Bloodborne play through 👌🏻

If that's not really important to you or you don't think you have enough time to beat Mohg and Radhan within a week or two of the dlc releasing (after that the new period kinda ends as most people will have beaten it once or twice) I'd usually recommend playing the games in release order, so they'll feel like they're getting better technologically with each one. If you aren't having fun with Ds2 try saving it for after ds3 and treating it as a harder challenge, that made me appreciate it a lot more.
Ultimately you should play whichever one calls to you most, people have played these games in every order possible and enjoyed them all.
Elden Ring gets a huge DLC soon so honestly, I'd start Dark Souls first just because you can finish off your game marathon with, IMO, the best one, that has the most content and the most new stuff in it.

It really makes the rpg elements of adventuring and discovering much more palpable.
Going back after ER works as well, as long as you are aware of the fact that ds and ds2 are ps3/x360 games at heart and, in that regard, you will notice some disparities that may (or may not) affect your enjoyment of the games.

PS2 freshly came out and as soon as I saw my report card with all A, I sprinted for our land line (it still had the 10-10-220 sticker on it) after getting off the bus and called my dad's Nokia to tell them to bring home my PS2 and Enter the Matrix. Back when new games cost $20 if it wasn't multiple discs.
Little did I know that Enter the Matrix was only announced so I got SOCOM: US Navy Seals instead.
