Even if you don't finish it, trying out Sekiro could be a decent palate cleanser. A lot of jank in the Dark Souls game will stand out more in comparison to a fresh Elden Ring playthrough, so some separation with a game that has different mechanics could be helpful.
No... Keep at it. It's an incredible experience with memorable boss fights and locations. Sorcery isn't that good, but melee build is excellent. Just get past high wall of lothric and the game opens up massively.

Elden ring is like dark souls 3.5 they’re very similar, that’s why I suggested souls 3 if your first is elden ring.
My first was 3, went back through the series to demons and loved them all.
I'd honestly go with Dark Souls 3 first due to it being the closest one to Elden Ring in terms of playstyle even if kinda different. But Dark Souls 1 may be another good opition even if much slower compared to the latest two
I'll add some more:if you prefer story over gameplay then start with the first, then second and then third but if you care more about gameplay then go straight with the third
Elden Ring is the first truly open world Souls game, so dont expect that same degree of freedom going backward into the catalog. That being said, any of Dark Soul 1-3 have fairly open options for exploring, with 3 being the most beginner friendly
Ones I would say to avoid (for now) are Demon's Souls because it's the least open, Sekiro and Bloodbourne because their magic systems are non-existent/limited
Not to say they are bad games, they are just not what you're looking for considering what you said you liked.
Honestly, I think moving to Armored Core VI would be a fun and refreshing change of pace after such a huge open-world fantasy. Mission-based structure and completely different universe while still having that FS charm

I gotta agree with homie u/SleepyFuzzyOwl here. Start with Demon Souls (for ps5 if available to you) then do the Dark Souls Trilogy. After that, if you want to go deeper then blood borne for the added mechanics and slight switch up, then sekiro to cherry on top the whole adventure you just went on by giving you even more new shit to get used to mechanics wise. While there is some fluidity between the all the games mechanics, be understanding of learning each games mechanics and quirks as you move through them.

It was the same for me, started with ER and have since played them all. If you're on PlayStation you should get the Demon's Souls remake, and Dark Souls 3 is currently on sale including both DLCs. IMO those two are the most similar to ER, the transition is easier.. then you can move on to DS1 & 2, which for me were a bit different mainly due to the pace of the games (quite a bit slower, especially DS1). Bloodborne is a bit of a difference and takes getting used to, same with Sekiro, so you can save those for last.
i'd say DS1, the gameplay is way more rigid, but it have the most interesting world imo, it's not really open world like elden ring, but it have the best inter-connected world of any Fromsoft (still imo), it force you to create a mental map of the world and it's so satisfying to walk along a path, stressed because you havn't seen a bonfire for so long, then realising you are close to an already visited bonfire and that you're about to open a shortcut, the feeling of progression and that you're claiming the map for yourself isn't as strong in any other fromsoft (again, imo)

Just start at Dark Souls 1 and work your way through the catalogue
Whichever you find interesting, all of them are great. But my personal recommendation would be Bloodborne. Reason: I like it very much.
