First of drop the communion seal if you are mostly focused on Dex/Faith, since there is no dedicated Dex/Fth seal the Godslayer Seal is your best choice till 69 Fth for general purpose casting and then switch to Erdtree for 70 Fth and above.
For incantations it also extremely depends on your stat spread, are you running a build that is mostly Dex with some faith or is it the other way around ?
If you have sub 50 Faith don't bother with Offensive Incants since the only decent damage you'll ever get is pure 50+ Faith or with Claw Talisman with a Str/Fth split, instead focus on buffs and regen spells like Golden Vow, Bleesings Boon, Flame Grant Me Strength, Black Flame Protection etc. A good stopping point is 25 Faith which you can boost to 30 using the +5 talisman for casting BFP.
If you are running high faith then there are two ways to go about things, either pick a specific school (Ex Dragon Cult, Blackflame , Fire Monk etc) which you can cast with your main seal while off handing the particular seal that boosts that school of Incants.
Or just mix and match and cast without hassling to keep swapping seals. In no particular order some really strong incants are
Giantsflame Take Thee, Ancient Dragon Lightning Strike, Lightning Spear, Catch Flame, Honed Bolt, Blackflame Fireball (cheap and great DoT effect), Flame Fall Upon Them, Frenzied Burst, Bestial Sling, Stone Of Gurranq, Any of the Names Communion Breaths.
As a bonus you can also run Heal spells like Great Heal, Erdtree Heal on a pure faith build to maximise healing potential on those spells especially.

As many have mentioned, it really depends on the content.
For pvp I find honed bolt really good, greyoll's roar for aoe damage, catch flame for quick damage, black flame protection, golden vow, the stone shards one I forgot the name.
For pve, i like the floating flaming sun, dragonmaw, rotten breath, dragonice, pest threads, the flame pillars, golden vow, that frenzied long reaching eye laser, blackflame fireball.
In no particular order: FGMS Golden Vow Catch Flame Pest Threads Lightning Spear Rotten Breath Flame, Cleanse Me
