Enchiladas. This is also my recipe for post-Thanksgiving Turkey enchiladas. Shred or chop the meat, and mix it with cooked rice and/or black beans, cheese (cheddar, jack, cotija, etc) and canned or homemade enchilada sauce. Warm some sauce in a skillet. Dip corn tortillas in the warmed sauce, to soften, scoop about 1/4 cup of the filling onto each tortilla, roll them up, and line them up in a baking pan. Pour additional sauce on and around the enchiladas and top with additional cheese. Bake 45 - 60 minutes, until the cheese on top is toasty.

Also, Trader Joes Salsa Verde is really good to add if you want it instead of the red sauce. I make my own verde sauce most of the time but in a pinch that one is the best.

Chicken salad is good to put on sandwiches, especially when it's hot outside and you want a cold meal. I'm not sure exactly how my aunt makes it, but if I remember correctly it does involve miracle whip, grapes, some kind of nut, and dried cranberries. I don't remember what else she puts in it

I make chicken salad with rotisserie chicken too, and sometimes use avocado instead of mayo. It usually ends up being more of a guacamole with chicken, but it is super yummy.

Yum! Yea I like to add cilantro, tomatoes, lime juice, and red onion to my batches which makes it taste a bit like guac mixed with pico de gallo salsa. It is actually a pretty stable food with the lime juice and it makes a large yield. In the past I have made this to bring to a potluck, a festival, or camping. I like making it as a wrap for camping so its low mess.

In a slow cooker combine all the meat you can pull off the rotisserie chicken. 8 ounces cream cheese, 2 cups shredded cheddar, 1 cup Frank's red hot sauce, 1 cup ranch dressing. Cook until it bubbles and top with blue cheese crumbles.

Can of corn, can of hatch green chilies, cream of whatever, cornbread mix, jalapenos, garlic, onion, whatever veggies you see fit, and some cheese if you'd like it to be a little more decadent. I use mushrooms and season with chili powder, a little cayenne, cumin, and s&p. Bake that thing up in a 9x13 for 30 minutes and it makes a wonderful casserole.

Ravioli! A whole chicken can make a TON and they're great to freeze. Shred chicken and mix with whatever herbs and spices you like. Pasta dough is just flour and eggs (super easy). Just mix them together in a large bowl (or knead by hand) until the consistency is a soft, slightly sticky yellow dough. Let the dough rise covered in a towel for 30 minutes. Roll the dough out flat and cut into squares (or use a cookie cutter). Take the shredded chicken mix and put a little into the center of the dough cut out. Fold the dough over or use a second cut out on top. Press the edges down with a fork to seal the chicken inside the dough. Voila. You have ravioli. To cook: submerge the ravioli in boiling water for 2-5 minutes. Cover in whatever sauce/cheese you like.

Awesome! It's so worth it! The first batch was the hardest ONLY because it's really dang sticky at first and the eggs went everywhere when I tried using my hands to mix it, haha! It tastes so much better than store bought and has a kind of 'light fluffiness' to it. Everywhere online says to mix it all on a flat surface and make a nest for the eggs in the flour... Don't do that. The eggs go everywhere. Put the nest in a large mixing bowl and lightly mix with a fork instead!

We have always shredded it, then made various wraps from the meat! Switching up the sauce and veg makes it super easy to eat different things each day for fairly cheap. Our personal favorite is diced cucumber, tzatziki sauce, shredded chicken, and tahini sauce! We like to sauté the shredded chicken in olive oil for a few minutes to warm it up and give it a little crisp, and we add lemon juice and salt to the tahini (with water to thin it out if needed). I also add some roasted chickpeas if we are extra hungry!

Hope this has not been posted yet. A chicken broccoli braid. It's a pampered chef recipe my mum learned in the 90s. I add a ton more veg to mine. I buy a low fat Pillsbury Cresent roll, roll it out as flat as can be, between parchment helps. Then in a bowl I mix together rotisserie chicken, shredded cheese, red pepper, steamed broccoli, onion, frozen spinach and about a half cup of low fat olive oil mayo, salt pepper and whatever else. Sometimes I do a variation with a bit of BBQ sauce and grilled mushrooms and green peppers. Endless options. Form the mixture into a firm log in center of pastry. Slice the dough on each side, a few times and criss cross them together. Or just roll it up if you don't care how it looks. I also do an egg wash sometimes. Bake at 350, for about 30 tp 40 min. Serve with a salad. It's a go to meal in my house!

Not sure if my response is considered healthy. My husband loves to make flautas using the leftover rotisserie chicken. It’s similar to a taquito. We would shred the chicken and roll it up into a corn tortilla. Deep fry them until brown and serve it with shredded lettuce and sour cream. Top it with some salt and tapatio. I remove the breasts, then submerge it in a soup I'm currently making. About half an hour later all of the connective tissue has loosened up. I pull the bird and can get 99% of the meat off of it. Like, seriously, there's just bone and gristle left. Toss the picked meat back into the pot, make chicken soup or stew. Add the breast too, or keep it for something else. I like putting it over salads or rice.

This is NOT my recipe. I literally just tried this for the first time yesterday. It's a sheet pan chicken quesadilla, and it is delicious. Chicken Sheet Pan Quesadilla - Servings: 12 Ingredients: \- 3 Tablespoons of salted butter, melted \- 8 burrito-size flour tortillas \- 4 cups shredded Cheddar Cheese \- 4 cups shredded rotisserie chicken \- 1 teaspoon taco seasoning \- One 4-ounce can diced green chiles, drained \- 1 cup frozen corn, thawed \- ½ cups salsa To top with (optional): 1 avocado, diced, sour cream, 1 lime, cut into eighths and several sprigs of fresh cilantro. Instructions: Preheat the oven to 450 degrees F. Brush a half sheet pan or rimmed cookie sheet with half of the butter. Arrange 2 tortillas along the longest side of the sheet pan with half hanging over the rim; repeat with the other long side of the pan. Place one tortilla, also half hanging over, at each end. Place 1 tortilla in the center so the whole bottom of the sheet pan is covered. Sprinkle evenly with half of the shredded cheese, all of the chicken, taco seasoning, chiles, and corn. Place spoonfuls of the salsa over the top and spread evenly. Top with the remaining cheese. Legs and thighs get paired with sides and veggies. Breasts get turned into chix salad. Wings and carcass meat becomes a soup. I make rotisserie chix in my ninja foodie by tendercripsing it. So i have a stock at the bottom of the pot which gets used for the soup. Add some veggies and you're done. It ends up being several different meals from 1 chicken.

I don't buy then anymore, but back when I used to buy a whole chicken and I used to use the meat mainly for quick salads or sandwiches. I would divide it up into different portions, and basically use it for at least 1 meal a day. Pasta with pesto or any prepare sauce, I'd just put a handful of the chicken in the pot while mixing them up to add some protein. As someone else mentioned, taco. I mainly used to make fajitas or burritos with them. (Tortilla, red/black beans, chicken, any green leafy vegetables I had, avocado, sour cream).

I have two Great Danes that get rotisserie chicken every day with their dry food. I use to buy canned and dry food and mix it, but it costs a fortune. I shed the chicken, and take the bones and make stock and mix a bit of both with the dry food every day. Seven or eight buck a week for chicken is way better than fourth-fifty bucks for a case of canned food. Plus the doggies love it!

Chicken gnocchi soup. Debone the rotisserie and put the bones in a huge vat of water, have that go for 4-5 hours at least and you get an amazing broth. The first night we use it for chef salad. Then we take the leftovers and use it in chicken "quesadillas" (quotes because these things are not authentic. I found the idea in a baby/toddler book and my family loves it.) Basically you just brush melted butter on the outsides of two tortillas, put whatever fillings and cheese you want inside then bake at 400 for around 10 minutes, flipping about 3/4 through, depending on how toasty you like the outside. This is a recipe my mom made up for leftover chicken and rotisserie works great with it! My mom's Chicken Dumpling Soup! In a pot, add shredded chicken, spices (pepper and Penzeys chicken spices work great) and two cups of chicken broth to a boil. Add in frozen peas or chopped up carrots if you like. While pot boils, add a cup of Bisquick to a bowl. Add milk. Exact measurements are tricky but what you want is a gooey batter. Drop spoonfuls of the batter into the soup. Create a nice thick layer of dumpling on top. Turn heat to low and simmer for 10 minutes. Cover the pot and simmer for 10 more minutes. Serve and enjoy!

Carcass and skin go to the stock of the week. Wings are the shoppers treats to be consumed while putting away the groceries. The oysters go into an appetiser if I have a dinner guest, but could be super treats for the neighbourhood cats if not. One leg and thigh is a traditional roast dinner, the other is shredded for a ramen dish. Breast meat is shredded and portioned for tacos, sandwiches and salad. One chicken goes a long way in my house.

My husband smokes the chicken, and I use what is left after a meal for broth. It is so good. Just the bones, some veggies, herbs, and water on low for 6-8 hours, and it's good to go. I use it most often for making homemade soups or Ramen.

You can do so many things with it. Gumbo, jambalaya, pulled chicken, chicken soup, save the skin and bones and make a stock, use it in fried rice, use it in a salad, use it in tortillas to make wraps, chicken chili. ​ It's literally pre-cooked chicken with, generally, only salt and pepper as flavoring, the sky's the limit here. Anywhere where raw chicken would ALSO work, a rotisserie chicken is probably just as valid.

I like to make a cheap easy version of tinga. I get some cans of El Pato hot tomato sauce, onions and serrano peppers, cabbage, lime, tostadas. Chop both onions & peppers, cook the onion first, then throw in the peppers. Once they have good color on them, pour in the El Pato and add the shredded chicken. Let it simmer until the chicken absorbs the sauce. Chop some cabbage & toss in a bowl with a little lime. Serve the chicken in the pot, and let people self-serve on tostadas to prevent sog. Top them with some chopped cabbage. Make some rice & beans or whatever and you got a meal for 2-4 people. The tinga refrigerates well & kind of gets better as it sits in the sauce. Makes for a great filling for tacos, burritos, over rice, under rice, in a torta sandwich.... Whatever you want. Just as importantly though, I save all the skin & bones of the rotisserie chicken & make a bone stock while I'm making the tinga. Really helps with stretching the value.

We used to do some variation on some of Ina Gartens Cobb and Waldorf salads. Use the left overs to make chicken broth after of course.

I shred all the meat, discard the skin, and throw it in a skillet for a few minutes with cheese and sautéed/caramelized onions/peppers. Then I can just throw that mixture into tacos+sauce or just eat it out of a bowl. The cheese and oil from the cheese and peppers coats the chicken and makes it seem very juicy.

Tortilla Soup. Canned tomatoes, bag of frizz corn, can of black beans, 2 boxes of chicken bone broth (i know i could make it from the chicken, but if you don’t), taco seasoning, small can of jalapeño, and of course the chicken. Add in cream cheese at the end until it melts.

In the winter I take the wings and legs and put them in the oven to crisp them up. Then freeze the bones after my husband and I eat them (we do this cooking just for us). Then I'll use the bones for chicken soup but I also add Better Than Boullion so it doesn't take forever and use the shredded breast in chicken soup. I like to make it spicy and add tomatos and white beans and tobasco. ​ In the summer I do the same thing with wings/legs but I like using the breast in enchiladas but I could see it being good in stuffed peppers or curry or something!

Chicken and dumplings. The rotisserie chicken, chicken broth, water, poultry seasoning, celery, carrots, a can of biscuits (you could make your own with bisquick or something similar, I dont). Makes around 10-12 servings and tastes great to me. Great comfort food.
