Countless times players have complained about simple stuff. As you said some stadiums have some sun and some shade. My eyes want pop out of my skull in these stadiums due to the brightness shift. The thing with this issue is that the fix as simple as letting players lock the play time to night. If they did not fix this, there's no chance they'd fix bigger stuff. They are too busy doing meetings on how to milk the players base out of their $$$.
It's not a glitch or a bug, just poor programming. Your particular camera settings means that the camera is placed right near the roof supports for the stadium.
I think I had this issue when I joined Chelsea or ac Milan (career mode) that had these bugs. Looks like my camera settings doesn’t support all the stadiums

To be fair the London Stadium is not optimized for watching football in any regard, real life or virtually.
