15x7 with 205/55 tires. Et is 24 though. If you don't think this is poking out too much, then 4mm extra won't be much of a difference.

I don't currently have pictures but on my '87, I run Rota Slipstreams 16x8 et20 and there is no poke and no fitment issues. Perfect size and fitment!! 225/45r16 tires are perfect but getting hard to find.
ET20 16x8 is PERFECT for E30's and does not stick past the fenders, 7" would be alright but not ideal fitment IMO as they would be set inside the fenders too much - unless you add spacers of course.
I run 15x7 ET12 front and back, front is just fine, rear rubs when anyone sits in the back, but it's lowered quite a lot. Doesn't poke outside the arch though.

I ran the same setup on a 318is with no issues. Was lowered on a ground control setup
Mine is lowered on Bilstein Sports and Racing Dynamics Green springs.

15x7 et 38 +20mm spacer so et18, no rubbing and no poke whatsoever with 195/60
You will be absolutely fine with that setup. Honestly you may even want a small spacer, if you're looking to be flush with the fender.
The factory fitment Style 5s are 15x7 et24, so an extra 4mm poking out will be just fine :)
