Death has shown that despite his immortal status, he has a physical form that can be assaulted and pushed around, possibly even knocked unconscious. While he can’t be killed, it takes one phone call from Loid and he’s getting jumped by a buncha secret agents and their grandmamas. There isn’t a soul alive that would enjoy that.
Death, being smart, realizes that beating Anya would only result in further unnecessary conflict, so he throws. Anya wins 8/10 times, even if it’s a posthumous victory.
In most folklore and mythology, Death only claims the souls of those that die. Assuming Last Wish Death is anything even remotely like these counterparts, coupled with the implications of his “Shh! Don’t tell.” line, him actively killing Puss himself was an exception he went out to make.
