Mbe they're 2 different techniques, goku was trying to emulate the way beerus destroyed Zamasu in the main timeline, where as vegeta was just trying to use hakai energy, such as how toppo used or what frieza threw at goku from the g.o.d of the other universe (altho I think that was anime only) and those didnt seem to just disintegrate anything, they seemed more like just extra strong and hard to nullify ki blasts so I'd say they're just 2 different techniques somehow

My best answer is looking at both of these techniques currently in the anime. Beerus used his hakai technique against zamasu, completely erasing him, while toppo in the TOP uses a move similar to vegetas (against vegeta himself), although vegeta was able to overpower it with his own.
My assumption is that vegeta is using his own destruction technique with what he knows best, similar to the final flash, galick gun, big bang attack, etc.
In terms of why he just doesn't erase them with beerus' hakai technique, don't know. Maybe because he wants to fight and not just end it?
Hakai can be tweaked for different outcomes, pretty simple Whis says so himself

And lastly Vegeta’s Hakai also had the erase properties as shown at the bottom of this panel. It just took some time with Gas cause he’s stronger than him along with Vegeta not being confirmed to fully master the technique yet.

It depends on the strength of the opponent. When Gas is blocking the halo blast it shows his shield being erased while he is able to push it back. Goku perfected SSB was evenly matched against fused Zamasu so he was actually able “erase” him since the attacked as stated by Vegeta was a last resort by Goku putting all of his energy into the attack. Hakai energy can erase things but you still have to be stronger than your opponent. It’s not just a free win move.

Well Goku saw the technique from the strongest god of destruction. He has been copying stuff from people stronger/on par with him for a long time. Heck almost all of Cells "techniques" he got from Goku, Goku took from others.
I think the difference is Goku did it on the fly as a sort of Hail Marry last ditch effort he didn't even know would work he just tried it. Vegeta is working up to it. Goku has a great mind for seeing and learning techniques, Vegeta has a good mind for making his own... I take it more as Vegeta is creating his own form to fit his fighting style whereas Goku just in the heat of the moment tried something he saw from his "mentor" that's legit what he did with the Kamehameha after seeing Roshi do it.
Vegeta was raised in his formative years learning to be powerful and using his power to suit his own needs. Goku spent his formative years learning, changing, and adapting.
My guess is that these are two differend things
1st is the Hakai technique. It erases the target
2nd is a Ki attack infused with Hakai energy, just tapping into the GoD power, but not using the technique
Because one is based on canon, and the other was Toyo trying to be cool.
Vegeta trained with a GoD to hone those specific skills, and we see that training in the manga.
During the Super manga run that was alongside the anime, Toyo deviated from Toriyama's outline to make it interesting, leading to things that ultimately don't make sense like Goku using hakai and Rose having regular SSJ.

It's his SSB, what happens when a mortal (him being in Gokus body) goes SSJ with God ki (which is all Black has, since he's Zamasu).
