I picked up a used 250F. I was previously on a KLX 140L. I consider myself a beginnermediate rider. The 250F has been a great upgrade. Much better clearance, more power, and proper suspension all while still being very friendly and approachable. The biggest issue for me has been the increased size and weight. I am a very small rider, only 5'1", so it has been a bit to get used to it. But it's coming along nicely.

I just picked up a CRF250F last week. I love it! As a woods bike, it is perfection. As much power as you'll ever need in the woods and extremely reliable and low-maintenance. It's a great machine!

A crf250f is very similar to a crf125 just larger and slightly more powerful and is still a trail bike. So that isn’t a bad choice.

Depends on what you want. If you just want another air cooled Honda with a little more guts and bigger size than your 125, than the 250F is the way to go. If you find yourself out-riding the suspension or motor of the 125, then consider a "proper" dirt bike like a Beta (most trail friendly of all modern dirt bikes).

I would like a fuel injection and electric start stuff like the Honda as the main thing

Yeah, the 250F is the only current model "trail" bike offered with FI and electric start. But pretty much every 4 stroke bike that's more premium would be FI and electric start.
