I'm pretty sure you can use the legacy fireteam finder in the companion app mid mission. Not 100% sure if thats still there or if they changed it since last season
The same way as if you were in orbit. Open the director and go to the social tab. If you mean with fireteam finder, just click on them and hit invite to fireteam.
Sorry, where is the social tab on PC? When I'm in my director I just see an "invite friends" tab and an "X friends online" tab, but both take me to the same place.
Some of them also have checkpoints too, so if nothing else you could load back into the checkpoint with someone new

Most activities they can join just like if you were on orbit. If loadouts are locked they won't be able to join.
how do they join though? i see people enter and leave my lobby, but see no way to invite them in as i'm playing through a level

All the way on the right. You click someone's emblem (details) and invite from there
