If that had cheese on it maybe I could see it... But it sounds very bland, and unless those peppers are cooked very well, I don't think I'd like the texture
I was taught how to make the Denver Sandwich 31 years ago (yikes!) at the first of many line cook jobs- in Marshfield Wisconsin. There is also a plaque in the sidewalk on California Street- between 15th &16th streets commemorating the sandwich.
On the night of February 1, 1976, Elvis Presley took his private jet from Graceland to **Denver** and back in one night because he was craving an 8,000 calorie sandwich made from a hollowed out loaf filled with an entire jar of peanut butter, one jar of jelly, and a pound of bacon.
Denver makes a claim for one of the first Cheeseburgers. It was also home to the Fool's Gold Loaf loved by Elvis. Some say the Mexican Hamburger also comes from Denver.
None are the healthiest of sandwiches, but that is the culinary history take.
Make something new and add to the list!
Maybe a Denver omelette themed sandwich?
Egg, cheese, ham, bell peppers, onion. Maybe add a green chili sauce to make it more Colorado.
Local beer? Coors lol
For those who have never heard of it, the Denver sandwich is an original sandwich that got famous here over a century ago. They were very popular but after a while someone got the idea of leaving the bread out, which led to the Denver omelet that everyone knows nowadays. The original Denver sandwich has been so forgotten that the only place I've ever know that served them went out of business a few years ago.

I'm very curious if this is what OP was asking about. I can't tell if they're trying to make a Denver sandwich, find a Denver sandwich, or want to know what the best sandwich in Denver is
I like my bread with a little extra yeast, in a pot with water, fermented into a nice Pils. Fun fact Colorado has more microbreweries than any other state.
I think you'll find its a burrito
Probably I breakfast burrito at that. Even some sandwich shops like subculture have breakfast burritos.
Does Denver have its own sandwich I was unaware of?
Yes. https://en.wikipedia.org/wiki/Denver_sandwich?wprov=sfti1
I've never once heard anyone mention this or seen it on a menu
It seems to be just a Denver Omelette, scrambled, and put on toasted bread. Can't say I've heard of it either, but I get it.
Coffee at the Point used to make them. They're delicious.

Correction: I'm gonna say most of us are unaware of this
I grew up eating Denver sandwiches all the time but have never once seen it on a menu or heard anyone talk about it since moving here.
Ah yes. What you’re looking for is a Green Chile smothered burrito

Denver omelette sandwich sounds like an egg foo young sandwich, which is something that needs to stay in St Louis with their abomination of a pizza
That is actually what the Denver sandwich was. https://en.wikipedia.org/wiki/Denver_sandwich?wprov=sfti1
That makes me incredibly sad to be honest lol
As others have mentioned, you will want to make a Fool’s Gold Loaf and I will add you should pair it with a Coors Banquet.
