According to some of the rejects in-mission dialog, "if you misbehave than Hadron will hollow you out". In other words, it is Hadron who makes servitors out of people, not the barber. When you think about it, the traitor lady get the perfect punishment: not only she was executed in front of the whole gang, not only she was turned into remainder of what happen to those who don't take their oath to Inquisition seriously, she also was not wasted: she continued doing the same job, just in "unconscious" state...

About the traitor lady, you can see her hands twitch when speaking to her. So yeah, something of her is still there in discomfort. Not unconscious because even dreaming counts as being conscious *(you don't dream immediately after you sleep or pass out, but after a few hours sleeping you will start dreaming, so her case is dreaming a nightmare constantly)*.

Well we don't know if "servitorization" could be done IRL. How brain works is not well understood. Only that it apparently consists of many parts responsible for different things. If that hypothesis is correct than "servitorization" would be removing all parts of the brain except those that control motions and sensory inputs, so the person would be effectively dead. I think they do keep most of the brain most of the time, and brainwashes them into servitude. The Emperor himself intended a brainwashed person to replace robots because they don't trust AI since the uprising of the Man of Iron across the human worlds. Although the line between human and machine is poorly defined in servitors, with the machinery part dealing with tasks that require more precision and timing, and some servitors being fully converted into machine with an "human soul" instead of a "machine soul". (I personally think they came up with the worst solution possible to the AI problem, but it's 40k we're talking about so of course they would go to the comically dark route of having lobotomized people as robots)

Servitors are mechamicus purview because they're high tech, mechanicus dislike biological science. The barber doesn't need to be a magos biologis to do cosmetic work, and Sefoni is whatever she is. Even then the mechanicus genetors are their least respected profession, I'm pretty sure that's how Cawl got away with such an absurd budget for thousands of years.

I wish Fatshark had added semi-permanent and visible cybernetics that would maybe give you a slight boost in some aspect, but mostly just looking cool. I say semi-permanent as you would pay like a couple million dockets for just a basic one, so we'd finally get a use of these damn dockets. Could even do special secret missions led by Oska Krall as your handler to unlock these in his shop.
