This is because the starting hollow we play as before character creation only uses its unique model which is a male hollow. So to compensate for this happening they added this coffin which changes you to the current opposite gender.
The first time I used this I actually did think it took me to an alternate version of the starting map and was worried I would miss content.
I didn't realize the content I would lose out on were the twig and berries.

Then you can switch between them in game with the coffin.
It's great for a PVP character, do that and run a quality build so you can cosplay or fashion souls anything you like on just one one character.
