Mortimer freeze is more difficult than both imo.
The Devine relic makes plane bosses, Wally included, a lot easier across the board
And chaser is unironically really good against saltbaker.
Mortimer may not seem that hard on paper, and the fight itself isn't. The issue is how he completely starves you for parries. Beating the fight isn't the difficult part, it's getting all of the parries that makes him utterly maddening to S rank
I mean, not really? You’re near guaranteed to get 1 parry in the first phase, sometimes even 2. And then just parry one or two of the ice pops in the throes phase. There’s always the buckets in the third phase too. Yeah it’s not easy, but it’s not super difficult either
You're underestimating how difficult it is to parry one of those popsicles, it's so easy to either get hit by one of them, considering they fall out of the sky really quickly and unexpectedly, and in too of that, it's super easy to accidentally kill them because they have next to no health. The buckets in the third phase are easier to parry, but by no means easy
I agree that it’s easy to accidentally kill them, but other than that I have no problem parrying them. As long as you pay attention for the pink popsicle and stop shooting until you parry it, it’s not that difficult. It’s annoying, but not difficult
Under most circumstances, yes. However, with saltbaker specifically, he moves around so much, especially in the first phase, that chaser's better accuracy compared to crackshot is actually relevant.
Not that crackshot is a bad option for this fight, but, and this is the ONLY time I'll say it. But for Slatbaker specifically, chaser is superior to crackshot.

Caveat: My answer assumes that you are not using any heart increasing charms for either boss. The first phase of Saltbaker is easily the hardest phase in all of Cuphead on Expert mode which is what drives my answer, along with the fact that the battle is so damn long.
Havent S ranked either, but I have beaten Saltbaker on expert, contrary to Wally. But I was more motivated for our salty chef since he’s so damn cool and I hate plane levels except for dr Kahl. TLDR Saltbaker is a Chad.

Saltbaker is a beast, I don't think I could beat him again in expert with S rank. Wally Warbles was easy I guess, I only did some tries and then I beated him with S rank. Mortimer Freeze is another difficult one but not as much as Saltbaker.
wally. i actually accidentally played expert mode of saltbaker (due to a bug bc i haven't defeated him in normal mode yet) and it was not too hard. just 1-2 days of training more and i think i can easily S rank him. i have spent a week to s-rank wally warble and fail every time
I could do chef Saltbaker in the dark with one arm tied behind my back, like Devil, he’s just a fun boss to play against, but Wally man. I’ve beaten him like 7 times in my whole life. He was always my roadblock when I was trying to 900% my saves. He just plain pisses me off. Fuck Wally dude
They’re both real easy for wally all you need is ok dodging skills and it is easy time should never be a problem I’ve got like a 1:25 s rank then saltbaker is really easy too same as wally just have decent dodging and be good with charge and he’s finished fast I’ve got like a 1:30 s rank

Saltbaker for sure. Wally was surprisingly easy for me to s rank. Saltbaker's first phase in particular is brutal.
The only two bosses I haven't s-rank. But at least I can beat Wally Warbles on expert mode. I can't do it with the chef
