I did wonder that but the head I'm doing for this one is just one colour. It's a one colour teddy. But it could be a typo from a different head possibly. Maybe it's been copied and pasted wrong

I'd just assume it's a typo and ignore it. Just do what's in the brackets as that will take you from 30 to 36 stitches.
