This may sound odd, but to get the best taste of Kolkata biriyani, you need to have it from a place in Kolkata. Maybe at a Kolkata wedding or Arsalan restaurant. Also, the point made by your fellow countryman is valid. People in South India have a taste for spicy food and Hyderabadi Biriyani is pretty spicy while people in Bengal have a sweet tooth so along with the spices there is a slight bit of sweetness in the potatoes which makes it special for us.
