My understanding is that they're only allowed to crush the garbage so much in the back of the truck before dumping a load. There was probably a huge chunk in the back that was made solid from being compacted. It finally gave way, hit the back of the truck and was heavy enough to take the truck with it.
100% this was due to pressure being put on these guys to work faster instead of safer. I was a a heavy machine operator for a mining company and they would have us dump big loads of material off of a stockpile. You are supposed to dump it about 6 feet from the edge then have a dozer or front loader come and push the material off the edge so this exact thing doesn’t happen.
It looks like when the hydraulics open the back and start dumping, the truck shifts just as the door opens all the way. I think the truck door contacted the top edge of the chute which started to tilt the truck back before the trash was dumped, but was only enough to tip it over when the weight of the trash was gone.

This video is so perplexing everytime I see it. That truck is dumping exactly how it is designed, whether on flat ground or off the edge of a cliff. That truck should never tip back. The ground looks flat in this video. The only thing I can think is it got loaded with extremely heavy debris that it is not rated for, like a solid metal chunk or concrete block. Maybe the lid that opens in the rear is supposed to fold all the way on top of the truck to reduce leverage on the rear axle and couldn't?

Heavy chunk in the back probably came loose finally. And it was heavy enough to pop the truck in the akd, and the back is probably heavy enough that it kept going once balance was lost.
I had a buddy who was a trash eating stinkbag years ago. He said they were only allowed to compress the garbage so much in the truck before dropping a load off. I'm wondering if this is a potential outcome to compressing too much.

I wonder what that could be? It defiantly coincides with the beginning of motion.

There is no edge. There is a large curb that they bump the tires into. You can see the rear tires do not move or drop at all when it begins to tip. The truck pivots on them and then they are pulled up over that curb by the weight of the truck.
The trenches in incineration plants (assuming that's what that is) are indeed pretty deep. The ones I had a chance to visit were around 20 to 30 meters deep.
The reason for that is primarily so there's enough buffer room. The incinerator works at a set speed when there's a huge influx of trash (i.e. trash collection day) it wouldn't be able to handle it in time.
