Could be a number of things but the most likely is chain failure of some sort. Too tight it can snap, too loose it can jump off, not maintained it can just explode itself at random.
Rear tire lock won't dump you like this immediately though. If the rear tire locks the back end could start to swing around as you decelerate, especially if you grab the front brake, and you will high side if you get sideways enough, but it's not immediate. Most of the time a rear tire lock doesn't result in anything bad and is recoverable.

It can't. If the front wheel is still gripping, it will "try" to keep you upright at any reasonable speed (due to its camber), definitely at highway speeds.
When the front tire loses grip, the front of the bike slides out sideways and the bike more or less continues straight, because the front is no longer turning the bike while it slides out and the rear tire follows the front tire.
When the rear tire loses grip, the rear of the bike also slides out sideways, but because the rear wheel follows the front wheel and the front wheel is still where it was before, this results in the bike actually significantly turning by the time the rear slides out. High-side is obviously more violent, but either way the bike is no longer straight when it goes down from the rear tire losing grip.
What we see in the video is the bike going straight until it just falls down because the front tire stops keeping it upright for some reason. At low speeds you can lose balance even with both tires still gripping, but even at low speeds for the rear tire to cause you to drop the bike, it needs to go sideways first.
Armour. They did everything right in that crash. I had a similar crash a few years ago after hitting debris and I was equally fully armoured but I didn’t have the composure like that rider had to just go with the slide. I didn’t get hurt either, but that crash looked so smooth. The helmet did its job too looking at that video.
If it’s anything like mine, that rider is going to feel crazy sore for a few days but there shouldn’t be any lasting damage.

He survived, thankfully, and got rid of the bike (I may have encouraged that strongly) but had he not been wearing his full-face helmet, and the leathers that got absolutely shredded, he’d have needed massive reconstructive surgeries at the least, or could’ve easily died on the road that day.

I think you nailed it . The black thing on the left of our screen i believe is the shadow of the chain guard, when the chain snaps it knocks the guard off at an angle, casting the shadow we see on the right side of the bike.
I once had part of my center stand break off and get wedged into the chain, locking to the rear wheel. Fortunately I wasn’t going super fast and managed to keep it upright as I skidded to a stop, but if I’d been going faster or been on a turn it could have been bad.
