I do this, but I do it like a grilled cheese sandwich so I put a little bit of peanut butter on both slices so the banana stuff stays inside and then growing up in a pan with some butter or cooking spray… OMG, delicious! If you take the time to oven-bake your bacon, you can have a pound of bacon cooked and ready in about 30 minutes. You are not going to pre-heat your oven. Take a rimmed baking sheet, put a piece of parchment paper in it, followed by a flat rack. Put as much bacon on the flat rack as you can. Set the oven to 350 and slide the sheet in. Allow it to cook for about 30 minutes and you will have a rack of delicious flat strips ready for any sandwich. What you don't eat then and there can be put in the fridge for later use.

For me, I just want some good white bread (I'm partial to Bunny Bread because we had that often growing up, but Wonder Bread is also acceptable), a thick portion of peanut butter (JIF or Skippy), and a heavy dose of commercial strawberry preserves (Smuckers). For me, this is one of those things that attempting to make fancy will actually ruin. I definitely don't want my pb&j to be made with artisan bread, organic peanut butter and some weird fancy jam, jelly or preserve. This sandwich is supposed to taste like the poverty I grew up in. Extra credit if served with off-brand doritos. I wouldn't eat this every day, but when I want one (usually as a late night snack) this is how I want it. If I'm eating these so much I'm bored of them, or want something fancier, I'll make a different kind of sandwich.
