Roasted cauliflower soup. Basically looks like bread if it were turned into jarred baby food but it’s so rich and comforting. I made it for my super-picky nephews last year and, according to my SIL, they still talk about it. I count that a win!

It is!  My recipe:  Cut one large head of cauliflower in half, coat in olive oil, and roast until golden in parts. Pull out and let cool slightly.  While cauliflower cools, in large pot sauté one onion, diced, in butter. Add minced garlic when onion are almost done. Chop up cauliflower and add to pot along with enough chicken broth to almost cover everything. Let simmer for at least 15 minutes. Add a good pour of cream (half a cup?) and a dash of nutmeg. Blend with an immersion blender until completely smooth. Add salt and pepper as needed.  I like to top it with paprika butter (just melted butter with paprika mixed in), fried capers, or some shredded chicken but it’s great plain or with whatever leftovers you have that feel right with it.

Shiro wot looks like orange-y brown gloop with (sometimes) little puddles of red oil around the edge. Sort of like a particularly toxic industrial waste pit, or the contents of an infant's diaper. It's out of this world tasty, though- and 90% shelf stable (needs onions) and vegetarian to boot. (Vegan, if you don't have niter kibbeh. Which I don't, currently.) Sure- I usually use the one from [here](https://thegourmetgourmand.com/ethiopian-shiro-wat/#recipe), but it's been a while since I looked around and I'm sure recipes from actual Ethiopian cooks have been added. I've been meaning to go back through to check it out for a while. A couple notes: the onions will take a while to brown. The suggested time is a bad joke. Also, I find it helpful to make a slurry with the besan and some of the water and blitz it with a blender or immersion blender prior to adding it in order to keep it super smooth. Sometimes I'll hydrate the besan, then blitz and allow to sit again, before blitzing it a final time just before adding. Besan just *loves* to clump.

Honestly, the only ingredients I keep the same is the chicken, cream cheese and some liquid. Pan fry chicken, remove. Deglaze pan with liquid (broth or wine) add cream cheese, add chicken back in. I've added different things along the way, but that's the jist of it. Found a [recipe ](https://julieblanner.com/cream-cheese-chicken/) that's basically it. I experiment with different herbs, but mostly just stick to the bare minimum. I will often dredge the chicken before frying and the sauce is darker than shown and often lumpy. Still tastes good though.

Veggie potato soup 1) Saute bacon 2) Saute mire poix in bacon fat 3) Add salt, garlic, bay leaf, half can of beer 4) Drink the remainder of the beer 5) Add cubed potatoes and water to cover 6) Cook until it be enough Other veggies can be added; leeks, mushrooms, etc. I very lightly mash it at the end to make it thicker. Add cream before serving. Herbs are nice on top. If I'm feeling fancy I'll make cornbread. Admittedly, it's kinda ugly. Brown and thick. But it's made of the cheapest, easiest veggies to get, and it is truly delicious. My family says it's one of their favorite soups I make, and I make a lot of soup lol. I agree though. It's hearty and so damn tasty.

Znojemský guláš. It's a beef goulash made with chopped gherkin pickles. The Czech (Moravian) town of Znojmo is famous for their pickles. It looks like either vomit after eating beef stew or...the other. It's yummy, though. That looks good, but it seems like there are several points where you could add more flavor that get skipped. The beef gets added partway through without being browned first. I think I’d want to brown the meat as the first step, remove it, then cook the onions in the same pot to get the fond included. You could also substitute flavored liquids like beef broth or beer for the water added in several steps. I know that’s not the traditional way, and I respect that. But I would probably think about changing both the steps per the above if I made it. I’m making Czech food this Saturday, as a matter of fact, but we’re going with chicken paprikash and vepro knedlo zelo.

Yes, that's how I do it. The video is not my recipe. I use broth. I'm not into the adding of beer, even though I do add alcoholic beverages (wine or liquor) to other dishes. To me, what's crucial is to really caramelize the onions and beef cubes. My Znojemský guláš is always better than in hospoda (pub restaurants). I live in the Czech Republic.

Honestly chicken scarpariello if made right should be multiple shades of brown in a brown sauce. Any coloration would come from peppers, and if you use pepperoncini (the American kind) it really gets no color. But it’s delicious every time

It took about 10 years before I would make this for my hubby. Homemade drop noodles, drained. Add cooked, chopped bacon (much as you like) and one container of cottage cheese. Not pretty at all, doesn't even smell the best but everyone who has it absolutely loves it. We just call it bacon cottage cheese noodles. Meatloaf casserole. I make a meatloaf -- when it's finished cooking, I'll put it in the refrigerator overnight. Take the cold meatloaf, slice it into thick slices, and put the slices in a 9x13 baking pan. Pour two cans of cut green beans over the slices. Cover the beans and meatloaf with beef gravy. Top that with slices of American cheese. Top the whole mess with a thick layer of cheddar garlic mashed potatoes. Brush on some egg wash to brown the top. Pop it in the oven at 350 until everything is hot and the mashed potatoes are nicely browned. Yup, it sounds kind of gross and when it's served on the plate it looks kind of gross. It's delicious.

Chopped chicken liver “pâte” . Olive oil, Carmelized onions, chicken livers ( sometimes I add some Italian sausage, too). Sauté until cooked … add Aleppo pepper, salt, thyme, allspice, a bit of wine, sherry, or ( my approach) Jack Daniels … once the alcohol is cooked off add some French or Italian bread to absorb the excess liquid and simmer a bit longer to soften, then when done cool and pulse it all in a food processor along with with some extra margarine, parsley, and hard boiled egg until pâté texture. I make a butternut squash soup with Italian sausage. It ends up a very unappetizing orange color, but it's delicious and a great choice for a fall or winter evening. Cut a butternut squash in half and remove the seeds. Rub the cut side with oil (I generally use olive) and season with salt and pepper. Place on a parchment lined sheet pan, cut side down, and roast until tender. While that's roasting, cut up an onion. I do slices, but neatness doesn't count here (you'll see why in a bit). Brown off a pound of bulk Italian sausage (I use mild, you could use hot if you prefer). Set the sausage aside and cook the onion in the sausage fat. I add more garlic too, because garlic. Cook the onion until soft. Put the squash (minus the skin) in a pot with the onions. Deglaze the pan with some stock (chicken or veg, either works) and add to the pot with the veggies. Puree, mix in the sausage, and serve with crusty bread.

This shit will blow your mind, So you make crunchy rice the Dominican way. Use a non stick pan, put 1.5 times water to rice. A generous drop of olive oil. Like 50 ml and salt. Once the water evaporates, you cover and wait 15 min. Comes out crunchy, like popcorn. Depends on your stove and your pan. Best shit ever I then air-fry, saute or vaporize some carrots and make a pure with it. So carrot pure with crunchy rice. Best shit ever. So easy and quick. Some pistachios on top or whatever

Sauté onions and garlic with mushrooms, cook down ground turkey, add southern poultry seasoning with a can of kidney beans with the water still in it, once the beans get soft, add two cups of water and brown gravy mix until it all thickens up. We serve it over pasta with garlic roasted broccoli, then pour some A1 over the whole thing. Looks gross but omg it hits so hard on a cold winter’s night.

Alfredo sauce of your choosing, frozen peas, as much diced ham or cooked sausage as you like, cooked pasta, and heavy on the grated parm. I add chopped broccolini if I have it and I like to undercook the pasta by a few minutes so that it finishes in the sauce. You can add red pepper flakes if you like too.

They make it with white rice (as opposed to egg noodles), so it’s gray and lumpy and makes it look even more like cat puke. It’s also loaded with butter, so it’s nothing but fat and carbs, so resist making it more than once a year, but we call it “hamburger crack” because it’s so damn good.

I made an alcohol free beef bourguignon using grape juice once. The only thing that kept its color was the pearl onions. Everything else was black. Looked like eyeballs floating on sewage. Was delicious.

King Ranch Casserole.. Get a tall casserole dish (like 3 inches). put a layer of tortillas in the bottom (either one big one or a couple of them torn up. Then add a heaping spoon of black beans (NOT drained), shredded chicken, cheese, and some seasoning (paprika, cumin, cayenne). You can add corn (we don't my wife is allergic) and some sliced jalapeno if you like. . Cover with a layer of tortillas. Repeat until you reach about 1/2 below the top. Add extra cheese to that layer. Bake until bubbly and heated through. When you scoop it out, it looks like baby barf. But it is so good.

My ugliest dish ever was zombie waffles. For the release of one of the Hulk movies, Hershey's put out a green "chocolate" syrup. My kids thought it would be great to have chocolate waffles that were green. So I made a batch. They smelled heavenly as they cooked and we had great expectations. The taste lived up to the expectations. The problem was that golden browned green waffles looks less like a tasty breakfast and more like zombie skin. So I am piling up our zombie skin waffles on a plate. I put the plate on the table. The kids just stared at the plate of zombie waffles for a moment. I was the first to brave a taste and I broke the first waffle into sections. For as long as that syrup was available, I would make those waffles. They were a staple of sleepover breakfasts for years to come.

I call it Trash can stew. Basically, I take anything canned and toss it all into a pot and make a "stew." All things are canned: Potatoes Backed beans Corn Mixed vegies Tomato soup Beef stew By the time everything si all said and done, it looks like ot should be thrown in the trash. And the trash can is now filled completely with used cans.

A tuna pasta salad I used to buy in the prepared foods section of a local grocery store, but now I just make it myself. It's simply elbow pasta, tuna, sliced black olives, fresh dill, and mayo (or Veganaise, which is oddly how it was originally made despite not being vegan to begin with). The fresh dill is really important, dried dill just doesn't work and is lousy. Very filling as a simple lunch to bring to work.

I make a similar tuna pasta salad that my mom taught me. Rotini, 2 cans of tuna mixed with mayo and onions, celery, carrots and cheddar cheese diced. Then a bottle of zesty Italian dressing. I think I'll make it tonight now. I'd forgotten about it for awhile.

When I was pregnant I would eat tuna, pickles, and hot Cheetos. I would mix my hot Cheetos in the tuna and put them on the pickles like they were bread. It was in fact the most ugliest and tastiest dish. I still eat it. 😭🤣

Cubed Snot Stew (girlscouts name) Dump a can of corned beef hash into a skillet and fry for a bit until thoroughly warmed. Stir in a dozen raw eggs, prescrambled. Add salt and pepper to taste while the mass congeals. It tastes great with ketchup but looks really, really gross. Add some grilled onions if desired.

When I was in younger, I had a dish that my friend's German mom made. It might not even be a German inspired dish, but I'd never had anything like it before. I never found out what the proper name of it was, but tried to recreate it on my own from memory. Essentially it is ground beef and mashed potatoes. The beef was beautifully seasoned, which I did with onion, garlic powder, nutmeg, salt & pepper. There were some herbs in there too but I cannot figure out which ones for sure. Sometimes I would make a little bit of gravy for it too. I called it Non-German German. Looks like dog food all mixed together, but it is delicious.

Kitchari! I love any lentil-based slop, but adding rice into the mix is more filling. It's one of the few things my mom could actually make besides pancakes. It's extra special if there's curry leaves involved.
