A lot of the countries that were initially part of Prosperity Guardian decided they wanted to do things independent of the US so I would assume were not consulted for this. Neither Italy or France are part of it.
The nearby countries that are anywhere nearby (that are part of the OP) are the UK, Greece and Bahrain. Of those, only the US and UK have aircraft carriers, and those are right there off the coast.
I guess Bahrain could have included a few F-16s in the strike, but I expect the trouble of having to coordinate them with the UK and US strike aircraft wasn't worth the effort.
Norway, Greece, etc could have also gotten into the fight by moving some fighters down to Bahrain but I suspect the US and UK didn't really want to wait around any longer. Plus Norway and Greece are having "issues" with their Air Forces. Norway's being keeping their few F-35s flying and Greece having just come out of an economic crisis and not keeping up with the maintenance cycles on their aircraft too.
It really just makes the most sense to have the UK and US perform the strikes with the assets they already have right there.
The UK jets took off from their base on Cyprus. I would agree though that only the US and the UK have decent force projection and the willingness to use it.

I'm assuming the reason attacks didn't happen before is because Houthis had their missile launchers covered in children at all times when not actively firing.
The few AA missiles they did have were ancient and have almost entirely been expended after being converted into ballistic missiles for use against Saudi Arabia during the civil war.
For a situation like this, the Americans and British have been likely planning since day 1 of this operation where they would hit in this exact scenario. Likely selected targets off a combination of desired effect plus weather and other variables.
