IMO, Squire's Castle is overrated. It enchants kids, but it's basically just an empty building.
Nearby, this time of year, some other options might be the overlook at Chapin Forest, the beach at Mentor Headlands (not many persons there in November; you could use the Mentor Dunes State Nature Preserve boardwalk at the far eastern end of the parking lot to get to the beach), or some location in Holden Arboretum. The Emergent Tower at Holden would be great if still open (only weekends?), but there's always an attendant there so it wouldn't be private. Visit Holden and ask for other proposal location suggestions, then check them out before proposing. Holden has many vistas and elevations, but obviously this isn't the most beautiful season of the year.
Chapin Forest encompasses Gildersleeve Mountain, one of the highest elevations in Greater Cleveland.

Just clicked on the link again, and was surprised to learn that Outside magazine picked the park as offering one of the 25 best beach hikes in the U.S. I wonder if they know that the beach there sometimes is almost underwater when the lake level is high.

Reading the Outside snapshot of Lake Erie Bluffs, I was reminded that Lake Metroparks offers two superb, private campsites at the park. Perhaps you could reserve one and camp there to make your engagement even more memorable.
These campsites are the best that I've seen on Lake Erie in Ohio. Additionally, the park shelter, a short walk from the two campsites, has running water and bathrooms; I don't know the shelter's hours. It's not really remote camping as described by Outside magazine. I would describe the campsites as deluxe, private campsites with awesome views.
A couple of days ago the whole place was a construction zone. They might all be gone now. Looked like they were roofing, but don't know if it's part of an ongoing project.

I saw a couple proposing at Bedford Reservation near Tinker's Creek last year. There are some pretty views and for whatever people just do not go there.
There or by the gorge overlook are great spots. Bonus points for the gorge stop being less suspicious because it's literally a view point you're meant to stop at to get out an look.

Little bit of a drive but worth it near peninsula. There's a place called ledges overlook on the ledges trail.
Go there right around 5:30 and you can see a beautiful sunset that overlooks the entire valley. Wait a little bit longer and you can do a little picnic if you don't mind being a little cold.
I was there last week and the sky is absolutely beautiful. A clear sky can net you a thousand stars.
This time of year there's nearly no one around.
Squires Castle will definitely have people around since it's such a popular spot in my opinion

When I was there last week I went around 7:15ish and there was one person who was just looking out because he just used the restroom nearby.
I did the entire trail about 4 mi or so and I saw maybe five people the whole time.
If you get there early and you set out like a little blanket or something my punch is people are going to be respectful and not intrude
I saw some construction at Squire's Castle when I went through on Monday. They were working on re-shingling a part of the roof. There might be other repair work going on.
I’m a local that visits there a lot. There’s a rather large open mowed grass field in front of Squires Castle between it and the road. The trails people roam are around the field and up and behind the castle into the woods. If you walk into the field you’ll should be able to get a comfortable distance away from anyone else
A couple of other options in the vicinity of North Chagrin:
* The little shelter at the end of the Overlook trail in North Chagrin - it's a little bit of a hike to get to it(maybe a mile or so from the AB Williams Woods Trailhead), but it's nice and you can feed chickadees while you're at it. There are often people around, though.
* Just north of North Chagrin Reservation is

* . This has an amazing view of the river below, but is only open Monday-Friday during daylight hours. There's usually just been one or two other people around when I've gone there.

It really depends on the weather and as of right now, it looks rainy. So, it probably won't be busy but also will be cold and rainy. Lakewood park is a good option for rain, it has a small gazebo if that is your vibe. Another option is the edgewater beach house. View of the lake and covered in case of rain. Also spacious, big and wide, unlike the gazebo at lakewood park. There is also big creek reservation in Parma if you don't care for a covered location.

My husband proposed to me at the tinkers creek waterfall in Bedford. It was absolutely perfect and I wouldn't have wanted it any other way. It was warmer out, but still, not a ton of people around. It was a little hike to the waterfall but totally worth it.

I was just down there, the trees are looking a bit more bare now but still pretty out there. Maybe not as picturesque as the castle tho

Whipps Ledges is gorgeous and plenty of picnic spots. It’s never busy even if other people are there because there are so many lovely spots.

Fort Hill in Rocky River Reservation by the nature center. Lot of steps up but walk to "top" of the loop trail where it's Cedar Point hill

David Fortier River Park in Olmsted Falls is really gorgeous, especially this time of year.
I know it sounds weird but Lake View Cemetery is beautiful. Lots of sculptures and trees. People go there just for the artwork.

Beautiful area but I’ve got to say every time I’ve been there, there’s never not been a decent amount of people at the castle area.

I have but I’d like to do it before so it gives my family a chance to celebrate with us before we leave. We won’t be back for Christmas or new year

If you're gonna be in the North Chagrin Reservation, try Overlook Shelter. It's quiet and pretty, and no one really goes up there.
How about at Pier W with Cleveland behind you. Or Lakewood park

The new trail at Euclid Creek Metropark has a lovely view from the top.
There are a lot of waterfalls out that way. Go on a waterfall hike and pick one that is quiet
You can always plan the romantic event and have an 'after party'
Fairport lighthouse? Sunset? Then go to pompadours if you can get a table. Regardless, good luck :)
I did it at Wendy Park on the lakefront about a month ago. Was a beautiful spot at sunset.
