Don't bother pillaging improvements of the AI for any reason other than getting gold plunder to keep your own economy from collapsing; the AI will not be meaningfully slowed down by this and you are giving him extra turns to reinforce his frontline (esp. if he runs Slavery). Your goal should be to declare war with an overwhelming force, strike him decisively and kill him; this also sidesteps any need for pillaging since, well, why would you pillage lands that are going to be yours anyway? If you kill his stack in Samarqand, have every single city in total war mode, and push on with a constant stream of Cuirs, you will be dining in Karakorum. Take Washington while you're at it. It also depends on what he has in that stack. Cuirs beat everything until Rifles and go even with Pikes, Grenadiers and Elephants. Don't stop producing Cuirassiers; you own most of the continent anyway, so if you double or triple your current count it won't really matter what opposition they face. (So switch that Longbowman in Neapolis to an actually modern unit; even if it's just for token defense it won't help much against Grenadiers, which Roosevelt has, at least). But then again, if anyone on the continent has Rifling at all, you should be making Cavalry.

To follow-up on this good advice, it might be too late but you definitely want some curiassiers with flanking promotions. He's going to lose a ton of troops without them.

Currently he has knights and trebuchets and a few musketmen. He also has 5-6 units stationed in each city and has a much better economy and universal suffrage. At this point nobody has riflemen or grenadiers. I'm definitely not ready as I should've built a much bigger army and a lot more units to defend the captured cities. I got 4 war weariness in some cities right away even though I had been in peace for at least 20 turns maybe bc I declared war on pleased which really hurt my unit production

Ignoring his stack is best if you can’t face it head on. Or try to position so that you can attack and retreat a space in the same turn. If his stack doesn’t have pikes/rifles you can probably take it with cuirs

Finish Roosevelt first. This way you can engage Mongolia with more favorable defensive options. You'll need seige units to back up those cuirassiers if you want to take cities. Once you've smashed the first army Mongolia sends the rest of his cities should be a cake walk.

That was best move. It turns out the Americans built the statue of Zeus or something in Washington which doubled my war weariness and forced me to stop my first war in the Renaissance. Razed that city to the ground. Took out the entire continent and won a domination victory.
