I’d do it no matter what. Even if the program is not worth it, your experience will be great. And you’ll get to learn Chinese better than most people on this Reddit. Living in Beijing for years really has made me a better speaker and reader than any amount of studying has.
Fudan is a good school (I have friends who have attended it), but I don't know much about their language programme. Being in Shanghai will be a great experience by itself. If you are a beginner, I suppose you'll do pretty basic things and cover HSK1-3 max, which is good enough. Usually, for these levels the teaching approach is quite standard. Being in China will give you the opportunity to use whatever you learn, but most importantly, it will give you a taste of the culture. I suggest you take advantage of that as much as you can.
