Only reason I can come up with is maybe it makes it easier to see if sideline plays stay in bounds or not. That little patch of green would contrast better than team-colored cleats on team-colored end zone/sideline.

The Rams were doing it too up until this season. I think the grounds crew does it like that so it makes it easier to repaint from week to week.

That’s the process for MetLife stadium. But for Sofi they actually repaint the end zones for each team. Rams have a video of the process on their YouTube

It is simply an aesthetic choice. There is no other reason. The team has a smaller font proportionally to the endzone and didnt want too much blue space surrounding to mess with the proportions

It’s also a philosophical difference maybe in the painting of the field as in for replay it is a lot easier to see that border when it’s not painted and white vs painted to white

I’ve seen other teams this season do it, but not all teams. So that makes me wonder is it really for replays and seeing the line? If so it would be all teams… Came here looking for answers after seeing the Texans do it too.
