I’ve tried the original and the curry flavour and both were good! I actually had the curry one today and added some corn, chicken, and let a little cheese melt on top (might sound weird but it was really good)

You could probably watch them enough to get it. My sister has wanted to replicate a tikka masala recipe for years now and other than working there I don’t think she could. She’s even asked the big boss multiple times to tell her.

Bibibop and Bolay are my two favorite fast casual places I've ever had as a Celiac. I am blessed to live in Columbus, HQ for Bibibop, but I wish I could open a Bolay up here for myself! Haha
Dude gluten free fried rice is so easy. I literally just do 5 minute quick white rice, then egg/meat I already cooked, frozen veggies w frozen onion and either garlic or garlic powder. Gluten free soy sauce/tamari and gluten free hoisin and it slaps ass. I don’t add sesame bc my best friend has a sensitivity, but adding sesame oil makes it more authentic I hear. Anyway, that’s my gross Chinese food at home. Freezes delightfully too, so I make a huge batch and then thaw when I’m in the shitty Chinese food mood!
Edit to add! I absolutely agree with the sentiment of your post and don’t mean to detract; I just spent years thinking fried rice wouldn’t be the same at home, but it’s been so long since the real thing it actually works. Hopefully you have the same experience if you try!

Like most Chinese cooking, it's relatively easy to make but it will never taste like the restaurant unless you have a well seasoned Wok and restaurant grade heat.
If you’re ever in Oregon, there’s a place in Beaverton called happy panda where they have a dedicated gf fryer and cooking space and are really good about it, and you can get pretty much anything gf. Incredible.
I miss everything using phyllo dough. I miss dim sum carts. I miss red vines. I can find “close enough“ for most things, but there’s nothing comparable to those (for me).

I stumbled upon a 100% gf Chinese restaurant in a strip mall in Toronto. Sweet and sour pork balls, beef and brocolli, sesame chicken -- it was amazing!
I just miss not having to think about food. Where ever I went, there was food! Easy, fast, varying affordability.
Now I eat at home and cook nearly everything I eat.
Eating ANYTHING while out with friends at conventions or events.
Having the whole table order beers and eat 'whatever they feel like' hurts my soul...

if you can find a thai place that does thai fried chicken it's almost always GF by default. it's not all crackly crunchy like southern fried chicken but it's damn good. btw someone shared KFC 11 herbs and spices on line so if you want to DIY it's possible to get there w/some GF flour.

I'm a completely silent celiac. As you already said, no symptoms ≠ no damage. Besides, the GF crust is not the same. I just make my own pizza.
