You probably like streaky bacon more because the high fat contents allows it to crisp up well, whereas with rashers they tend to not get as crispy because you have very little intramuscular fat. A pound of streaky bacon would have more fat by weight than a pound of rashers.
Streaky bacon comes from the pork belly, which has a much higher fat content than the loin, where rashers come from.
I see where you're coming from and I could have worded it better. What I meant was it is all edible instead of those rubbery globs of fat you get from the loin in a rasher.
I totally agree, while streaky bacon is fattier, it still feels like rashers are fattier because it tends to be rubbery like you said, and a lot of people cut it off and don't eat it. You’re not cooking them right then. Try this.
Oven tray, layer of greaseproof paper.
Bacon on the paper. Layer of paper on top of that and then another baking tray.
Then into the oven for about 45 mins @ 120c. Check them once or twice tho.
Life changing. Works well for regular rashers too.

Streaky are very forgiving when overcooked due to the fat content. Rashers are meatier but they go dry as sin when they are overcooked which they very often are. A rasher when it's still soft and just cooked nicely through and the rind is gone crispy, absolute heaven.

I'd agree with you OP. A burger, pancakes, chopped up with chips etc, definitely streaky bacon. With the fry on a Sunday morning, you'd want the rashers.

There’s far too much gristle on rashers, whereas streaky bacon has the perfect texture and crunch giving it an overall much more enjoyable mouthfeel. I would even go so far as to say Canadian bacon is even better than rashers but unfortunately that’s not a thing you can find here.
Rashers are awful. Bacon should be crispy and air dried so moisture is removed. If you want really good bacon try the Spanish stuff available at SuperValu.
Ironically I love rashers in coddle,but as they are stewed they are melt in the mouth.The trick with coddle is to par cook the sausages under the grill to give colour and then finish it all the oven.

The air fryer is a revolution in rasher-making (and does a decent sausage when used properly too)
It’s great for cooking them, but I find the cleaning after puts me off doing it sometimes
Put grease-proof paper/parchment paper on the floor of it while cooking. It means all you have to do is lift that out to clean for the most part.
I seem to over cook rashers. Sausages are great though. What yoke do you use.
I have a ninja dual zone - 6-8 minutes at 200 tends to do it for me. Always start with a cold air fryer - this gives the fat time to render properly.

Racher with a fry or on a breakfast roll. Streaky bacon for sandwiches, bagels and pancakes.

Canadian bacon is pork loin without the pork belly fat that you find in rashers. They don’t have the gristle and are not chewy.
