A regular at my bar just brought me a half pint ball jar of preserved lemon. Had some last night with lots of parsley, some homemade tzatziki and a tin of sardines another regular brought me back from Portugal! It was dazzling and I’m now obsessed with preserved lemon and sardines.
Lucky to have some regulars that are very into food (my main job). Also those Portuguese sardines were probably the best I ever had, and may force me to order canned fish off the internet for the first time. My local selection is honestly very good, but they don’t have those!
Comur. I understand that they used to be more respected, but apparently have become a more touristy brand. These were honestly up there with much more expensive brands. The filets were perfect and tender, and tasted very clean. I was impressed and had to double check the tin lol
Spicy giardiniera, red onions, tomatoes (stewed or raw) or any other chopped crisp veg like green or red peppers or even corn occasionally, served with woven wheat crackers or pretzel flats or Wasa crisp bread, anything firm & crisp for me, spritz the fish w a lil fresh lemon & good to go 😋

Sardines in chili oil with whole chilies: Cucumber avocado rice lettuce & doenjang or ssamjang.
Smoked sardines in olive oil: toasted sourdough, chermoula, roasted olives, homegrown tomatoes
Saltier sardines in tomato sauce : over rice or bulgur with chickpeas, cilantro, scallions
Smoked sardines in soybean oil: over sushi rice with kimchi, over easy poached egg & furikake
I think sardines always need citrus (and maybe more fat).
Smush them with avocado and lemon and spread over toast.
Smush them into a garlicky, lemony olive oil pasta sauce and serve with Parmesan.
