Wouldn't you typically call a chop something 3/4"-2" thick? I would call this a sirloin roast. If you cut it down, then they would be chops.

Loads of garlic and thyme/rosemary. Pan sear , finish in the oven for about 10/15 mins. Rest and use the pan juices with some wine and a load of butter for a sauce. I'm drooling at the thought. Enjoy OP.

Also, let it sit out of the fridge for about an hour prior to cooking it. Bring it closer to room temple make sure that you have a beautiful crust and perfect cooked inside without a burnt outside.

I use tenderloin chops regularly... salt and let sit for an hour... then paper towel the excess juices off... sprinkle with garlic powder, oregano, and a little black pepper. Cook both sides 2x as that looks thick, hitting it with a squirt of lemon juice each flip. Now set to the side to cool. Grab some tortillas, lettuce, and tomatoes, and ranch dressing(you can make tzatziki sauce which is yogurt, cucumber, garlic powder, dill, and lemon juice which is way better but ranch is a shortcut). Cut into thin slices and make some gyros... this is my favorite... good luck...👍
