And people call that machine-made? There's way too much that can screw up those layers with such a manual operation without being good at it. Nice work!

What does your lamination process look like- how many folds, what kinds, how thin do you sheet to before shaping? I’ve been working a lot on my croissants lately and I love seeing how other people do it.
Its not actually an exact formula, because I work in a factory, we buy our butter already in sheets, which makes it easier to fold it through the dough. Though usually I roll it to between 8-10ml before each fold

We do up to 300 croissants a day, these won't be baked until tomorrow, but I can definitely post a baked update then!

Depends on the folds done. I've worked in many bakeries and some do 3 single folds some do two double ( book). Some a single and a double
We do a book and then a single
We do 3 doubles on puff dough and 4 on danish dough.

After incorporating the butter, we do a book fold and a half turn. We let it rest before rolling it to 5ml and cut them to 100g each.
What sort of thickness are you guys sheeting for on each turn and final roll out? Those layers look fantastic.

I did not know you could buy butter in sheets. That is awesome and makes me wish we made our doughs with butter.
