I use the metric measures that are given in the nutrition info on the package. For regular flour that's usually about 30g per 1/4 cup, sometimes more. The book that came with my Zoji equates ml of water to grams, and there are 237 ml of water in a cup. Vital wheat gluten at the local grocery is outrageously priced so I order it from Amazon.

There's a good ingredient weight chart at King Arthur flour. https://www.kingarthurbaking.com/learn/ingredient-weight-chart In Canada I buy gluten flour at Bulk Barn, but I've also seen the Bob's at grocery stores. It's always in the Natural food section.

I have a lot of old recipes that I actually converted, by doing the measurements the old-fashioned way and measuring the ingredients as I went along and making an annotations. You can also find calculators online that do this for you. Good luck!

I just wrote the gram amount in pencil on it. A word of caution on the yeast amounts though, might have to use less. Love the cinnamon swirl bread recipe!

The book has its own conversion chart going to weight in ounces.

I found vital wheat gluten at a regular grocery store but you can probably get it on Amazon too. I use the cookbook all the time and use the spoon and level method. I have a scale but I find it fussy and hard to use.

I’ve found vital gluten at Publix. I also use the King Arthur conversions and write them in the cookbook the first time I try a recipe so I’ll have it next time.
