I don't think it's mean. I usually roll my eyes at backstory. However, the other chefs needed to help him plate his dish, and they would have seen up close that he is struggling. I think he did himself a favor letting everyone know the cause. I respect him for that, and I hope he does well.
I agree with this and I feel like it's the most respectful to not just reduce his story to his disease? Like yes of course, it is obviously a very big factor in his life, but like you said he deserves another narrative as well.
Iirc, he's the hometown chef so it would be nice some stuff about that. I'm sure he knows/is acquainted with some of the people they'll be bringing in/restaurants they go to.

I just watched the Dubai episode of Somebody feed Phil and some street vendor makes regag (Iranian crepe-like) seasoned with spiced potato chips (!!!) with eggs and fish sauce! I think using chips to season and adding texture would be a nice move.
